Following on from our ‘OrchardWorld roasted Duck and Blush Orange recipe’ competition we released back in January, we are pleased to say that the answer is 'Three'. Two are juiced and one is cut into quarters and roasted alongside the duck. We have contacted the winners and once we have their permission to post their details we will publish them. Well done to everyone who entered it was great to see so many joining into a bit of light hearted fun.

Serves 4 | Prep Time 1hr 10 mins | Cooking Time 40 mins
INGREDIENTS
3 x OrchardWorld Oranges - Juice and zest of 2, then the third quartered with skin of to be roasted
along side the duck
4 x Duck Legs
2 tsp Juniper Berries
4 Garlic Cloves Crushed
2 tbsp runny honey
5 tbsp port
A few bay leaves
Pak Choi steamed
METHOD
1. Season the duck generously with salt and ground black pepper and pop into an
over proof dish.
2. Combine the juniper berries, garlic, orange zest and juice, honey and port. Pour
over the duck, cover and chill for 1 hour.
3. Heat the oven to 200°C or Gas Mark 6.
4. Arrange the duck, skin-side down, on top of the oranges cut into wedges and
roast for 20 mins.
5. Turn the duck, add the bay leaves and cook for 20 more mins. Serve with
steamed Pak Choi
