OrchardWorld's Vegetarian Sausage Rolls With Apple And Miso

The flavours in this recipe are to die for: with the earthy mushrooms and texture of the chestnuts, you wouldn’t believe that this is meat-free.

Serves - 16 People | Prep Time - 30 Mins | Cooling Time - 25-30 Mins

INGREDIENTS 

2 x OrchardWorld Apples - chopped

200g chestnut mushrooms

2 x leeks

2 x cloves of garlic

1 tbsp miso paste

2 tsp wholegrain mustard

1 tsp dried sage

30g chestnuts, finely chopped

60g grated cheddar cheese

70g breadcrumbs

1 pack (320g) of pre-made or ready-rolled puff pastry

1 x egg

2 tbsp black sesame seeds

2 tbsp olive oil

METHOD

1. Blitz the chestnut mushrooms in a blender. Finely slice and rinse the leeks

2. In one pan cook the mushrooms in a tablespoon of olive oil for 10 mins on a medium heat

3. In another pan fry the leeks in a tablespoon of olive oil. Dice the apples and add to the leeks. Cook together for 10 minutes

4. Finely dice the garlic and after the 10 mins cooking time add to the mushrooms along with the sage, miso paste and mustard. Cook for another 2 minutes.

5. Combine both pans in a bowl and mix in the cheese, chestnuts, and breadcrumbs. Allow to cool slightly.

6. Heat the oven to 180°C fan. Roll out the puff pastry and cut it in half horizontally.

7. Divide the mixture evenly and spread along the middle of each piece of pastry. Bring the top and bottom of each piece of pastry together and seal.

8. Roll the 2 large ‘sausage’ rolls over and cut into 8 even pieces per roll.

9. Place on a baking tray and make 2 slits on top of each ‘sausage’ roll. Wash with egg and sprinkle with the sesame seeds.
