SERVES 6 | PREPARE 15 MINS | FREEZE/STORE 4HRS/2WKS INGREDIENTS
8 ORCHARDWORLD KIWI FRUITS
120ML ORCHARDWORLD LIME JUICE (4 TO 5 LIMES)
150G CASTER SUGAR
1/2 CUP FRESH MINT LEAVES
1/2 CUP WATER
1OOML WHITE RUM
METHOD
1. Scoop the flesh of 5 of the Kiwis into a blender, add the lime juice, rum and half of the sugar. Blend into a puree.
2. In a saucepan, add the water, remainder of the sugar and the mint leaves. Bring to boil, reduce the heat and simmer for 8 minutes, stirring all the time. Add the mint sugar syrup to the puree and blend for a minute, allowing the syrup to fold through the puree.
3. Pour into six flat icicle moulds. Slice the last Kiwi into 5mm slices, place on top of each mould. Insert sticks
and freeze.
