OrchardWorld's Conference Pear & Chicory Salad Garnished With Manchego Cheese.

2 OrchardWorld Ripe & Ready Conference Pears, finely sliced
1 OrchardWorld Lemon - juice and zest
1 OrchardWorld Lime - juice and zesT
1 Fennel Bulb finely sliced
2 Chicory Heads
100G Manchego Cheese - shaved
40g Pecan Nuts
1 tbsp of Brown sugar butter syrup
1/2 tsp Honey mustard
4 tbsp Walnut oil
1. Add the sliced fennel and pear to a bowl of Lemon Juice and 600mm iced water and leave
for around 8 - 12 minutes to crisp. Pat dry using kitchen roll.
2. Dressing - take the juice and zest of lime, and the zest of a lemon, brown sugar syrup, honey mustard and walnut oil and put into a bowl and mix, finishing off with a little salt and pepper.
3. Separate the pear, chicory and fennel between the plates, then drizzle the dressing over the salad and then to finish scatter the Manchego cheese
